Scones / Frybread


2 1/2 cups flour
2 teaspoons salt
2 teaspoons baking powder
1/2 cup dry milk
1 1/2 cups warm water
oil canola or vegetable oil for frying
Heat oil to 375 degrees in a frying pan or electric skillet.
Combine all ingredients in a bowl.
Mix dough thoroughly, you may have to add more flour to get a soft dough consistency.
Divide dough into 4 balls.
Roll each dough ball out on a floured surface making a thin circle.
Lift it like a pizza dough off the surface.
Fry the dough in hot oil.
When you see the dough turning a golden brown - about 20-30 seconds. Flip over and cook the other side. It's normal to see big bubbles in the dough.
Remove from oil when both sides are a golden brown.
Drain off excess grease on a paper towel.

Keep warm in oven (200 degrees) until ready to serve.

FOR NAVAJO TACOS
Top fry bread with hot chili, cheese, olives, lettuce, tomatoes, and sour cream.
FOR ELEPHANT EARS
Brush with butter then sprinkle with cinnamon, sugar, and/or honey.

Banana Brownies


===== Brownies =====

1 ½ c Sugar
1 c Sour Cream
½ c softened Butter/Margarine
2 Eggs
3 Ripe Bananas
2 tsp Vanilla
2 c Flour
1 tsp Baking Soda

===== Frosting =====
½ c Butter
2 c Powdered Sugar
1 tsp Vanilla
3 tbsp Milk

===== Brownies =====
Mash bananas heavily in large mixing bowl.
Stir beaten eggs into bananas.
Add sugar, sour cream, butter (or margarine), vanilla, baking soda, and flour and mix until all ingredients are combined well.

Grease a 13x18 deep baking dish with pam or equivalent. Dust with flour. Pour mixture carefully, attempting to cover entire pan. Use a spreader to evenly coat the pan. Allow to settle for 5 minutes.

Bake at 375℉ for 20-25 minutes (toothpick stuck in the middle should come out clean).

===== Frosting =====
Start frosting with about 15 minutes left on the timer.

On medium heat, melt butter in small saucepan. Continue to stir butter until browned.
Add milk and vanilla to butter then slowly stir in powdered sugar until all ingredients are melted and combined. Keep warm, but do not overcook.

Pour frosting over brownies as soon as they come out of the oven. Spread evenly. Allow to cool 5-10 minutes before cutting and serving.

Mashed Potatoes


4 pounds potatoes russet or Yukon gold
1/3 cup salted butter melted
1 cup milk or cream
salt & pepper to taste
3 cloves garlic optional
  • Peel and quarter potatoes, place in COLD salted water.
  • Add potatoes (and garlic if using) and cook uncovered 15 minutes or until fork tender. Drain well.
  • Heat milk on the stove top (or in the microwave) until warm.
  • Add butter to the potatoes and begin mashing. Pour in milk a little at a time while using a potato masher to reach desired consistency.
Season with salt and pepper. Serve hot.
